Everything in California is a little bit different. Take sushi. In Japan, sushi typically consists of sticky rice and raw fish in a seaweed wrap. In California, however they just had to be different. They kept the sticky rice and wrap but took out the raw fish and substituted something that can be found all over California: avocado, thus creating the California roll!
